Blueberry Ecuador Ganache – vegan!

Our 75% Ecuador chocolate is hands-down my favorite chocolate. It’s rich, earthy and lightly fruity with a delicate floral finish. To many on the team (myself included) it has strong blueberry vibes, which is the inspiration for this vegan ganache. In fact, this flavor has just 4 ingredients: dark Ecuador chocolate, blueberries 3 ways*, sunflower oil, and cane sugar. After we enrobe each piece in dark chocolate, we joyfully drop a single dried Cape Cod blueberry on every perfect square and send them out into the world!

Carrot Coriander Caramel

Every now and then we like to sneak a real weirdo into the lineup. It's the kind of flavor that sounds a little crazy, but we ask that you embrace your adventurous side and give it a whirl! Carrie's Carrot Coriander Caramel is that flavor. We steep lightly ground fresh coriander in the heavy cream, mix in organic carrot juice and add local honey and organic molasses to the caramelized sugars. The result is a citrusy, chocolatey, carrot cake-esque joy. This one is only around through Easter, so hop to it!

Chewy Apricot Caramel

I personally think apricots are one of the most perfect fruits and I love them every way I can find them. Until a few weeks ago, that had not included with chocolate… but I am happy to report “in chewy caramel form covered in chocolate” now tops my list of best ways to enjoy an apricot. We use our favorite local honey to amp up the floral flavor of our apricots, and then we pour the whole jammy caramel over a blanket of barely-dried apricot bits (that look like tiny gems) so you’re sure to get a delicious nugget in every bite. Bon(bon) appétit!

Lemon Ganache

For the bright lemon-y kick in this ganache, we zest and then juice hundreds of lemons. It may sound like a bit of a drag, but we’re sunny-side thinkers over here, so we consider it grip-strengthening aromatherapy. We use the zest to infuse flavor into the heavy cream and fold the fresh lemon juice directly into the ganache. It’s our 70% classic dark chocolate blend in this ganache, but the lemon really brings out the fruity notes. The result is a pop of tangy chocolate-y goodness, best enjoyed while soaking up the spring sunshine. ☀️
