Coconut ganache

The name is really all you need to know. If you love coconut and dark chocolate, this bonbon is made for you! An understated gem, this rich dark chocolate ganache is everything you want from a treat. It is ultra rich with a texture that’ll have you second guessing the fully vegan ingredient list (it’s all coconut baby!). We top each square with a snowy layer of raw coconut to temper the sweetness and add a fun crunch. It’s perfectly simple and unreasonably delicious.*

Ginger sesame chewy caramel

Our seasonal chewy caramel is about equal parts ginger caramel and toasted organic sesame seeds, all wrapped up in rich dark chocolate. We start by making the caramel, then stir in what seems like a mountain of sesame seeds. Then we cover it in dark chocolate and give it a milk chocolate stripe that turns each bonbon into a tiny wrapped present. The result is warm and nutty with a satisfyingly sweet chew. It has the richness of sweet peanut butter, the sophisticated, almost bittersweet flavor of tahini, and finishes with a warm gingery glow. Best enjoyed sitting by the fire after a day out in the cold.

Apple cider gelee

We loved this one so much we couldn’t say goodbye! Back with a little extra winter-spice, this (vegan) gelee is still our favorite. Plenty sweet but slightly tangy, ride this wave of warm cinnamon apple til you land on the shores of our beloved 70% dark chocolate.

Raspberry Ganache

This recipe is laughably raspberried–about half razz by volume! We take tart and bright organic raspberry puree and add a smidge of sweetness, a dash of neutral fat (organic sunflower oil) and a whole lot of our 70% dark chocolate. The result is a luscious (and totally vegan) ganache that we pipe into our biggest mold so you get oodles of that bright raspberry filling in each bite.

Hot Toddy Caramel — inspired by a favorite winter drink, this caramel way out punches its weight in flavor. It starts with a lemon-infused honey-sweetened caramel and ends with our rich dark chocolate. And in the middle there is a quite generous portion of bourbon. All together, it’s a delightful bite of boozy joy.

Salted Loblolly Pine <3 — Mordecai's favorite (IYKYK). Made with uber-local loblolly pine needles (this year from Carrie’s backyard); collected, plucked off their branches, washed, dried, dehydrated, finely chopped in a food processor then hot infused in the cream. Tastes like walking through a Christmas tree farm in the snow with your mouth open, but sweeter.

Orange Cranberry Caramel — As a sour candy enthusiast, I'm here to say cranberries don't get enough love! They're in one dish at Thanksgiving and then everyone forgets about them ‘til next November -- not on my watch! This cranberry caramel is the perfect amount of tart, sweetened with local honey and has a beautifully creamy texture. If the plan works, upon tasting this bonbon, you'll be craving cranberries all year long.

Gingerbread Caramel — This crowdpleaser is back by popular demand (from customers AND employees)! When we cook the infused cream the whole factory smells so warm and cozy, it's like free aromatherapy. It's hard to imagine when we're standing over the pot, but the final product tastes even better than it smells.
