Fall for these autumnal delights

Have you gotten a whiff of fall yet? Around here it comes in the tiniest glimpses, sandwiched between 90 degree days. Wherever you are, let our new slate of fall bonbons lead you to the crisp days ahead!

Fig & Fennel Caramel

This first and most important step in this bonbon is getting our hands on local figs from a friend's massive fig tree a town over. We process these beautiful fruits (actually technically flowers -- figs are wild, look it up!) and then stir the puree into an orange-zest infused caramel. We coat each piece in dark chocolate and in honor of the pollinators that make our local figs possible, we sprinkle them with organic, wild-foraged fennel pollen and raw sugar crystals.

Olive Oil Ganache

Bona Furtuna makes the most delicious olive oil we've ever tasted. It’s no coincidence that their olive oils are made from 100% organic olives, grown, extracted and bottled at their small estate in Sicily. (Any plant that grows in this scenery is bound to taste delicious.)

To this remarkable olive oil, we add a squeeze of organic California orange and our award-winning 70% dark chocolate. The resulting ganache is truly luscious, totally vegan, and according to at least one team member, “fire.” 🔥

Muscadine Balsamic Caramel ♥️

This caramel is brought to you by my obsession with one of North Carolina’s best local secrets… muscadines! These perfect green globes with thick, sun-mottled skin, can be found growing wild all over NC (see my front yard for evidence of their prolific nature!) For this jammy caramel, we use loads of organic bronze muscadines from Eastern NC. We pair them with our 75% single origin dark chocolate from Ecuador and a drizzle of aged balsamic vinegar from Bona Furtuna. The result is a grape triple threat: sweet, rich and tangy. It’s also this confectioner’s favorite. 🙂

Tea & Cookies Ganache

This milk chocolate ganache is our favorite fall afternoon in bonbon form: a warm cup of earl grey alongside a crispety crunchity white chocolate cookie. The texture of the ganache is rich and fudgy, while the caramelized white chocolate cookie crumble adds a sweet and salty bite. There’s not much better than a cozy cup of tea when the weather finally slips us a chill, but we think this might be an even better treat.
