Apple Cider Gelée – vegan

What’s a gelée anyway? It’s basically a kind of jelly. Ours is made with all the apples: local apple cider we concentrate into a syrup PLUS apple puree PLUS apple pectin to thicken. It starts soft and bouncy, plenty sweet but slightly tangy, then the wave of cinnamon hits you and finally the sweetness gives way to the richness of the dark chocolate shell. We top it with a teeny dried apple bit tossed in cinnamon sugar because it’s cute and delicious and reminds us of cinnamon toast crunch.

Figgy Fennel Chewy Caramel

Our figgy fennel caramel combines rich ooey gooey fig newton-y caramel and a chocolate-covered fennel pollen finish. Here are 3 fun facts about figs to enhance your experience of the very best chewy caramel we’ve ever made*:

  1. Figs are actually flowers that grow inside out! (which makes them the perfect fruit for Halloween because their insides are so freaky)

  2. There are more than 800 varieties of figs. 470 of those grow in NC! 🤯

  3. Ours come from just a stone’s throw away in Holly Springs, from a big ole tree in the backyard of dear friends of Videri.

Olive Oil Ganache — vegan

Bona Fortuna makes the most delicious olive oil we've ever tasted. It’s the kind of liquid gold that tempts you to eat it by the spoonful, though we (mostly) manage to resist. To this truly remarkable olive oil, we add as little as possible, namely: a squeeze of organic California orange and our 70% dark chocolate. The resulting ganache is truly luscious, totally vegan, and goes spectacularly with a daydream of your next trip to Sicily.

Muscadine Balsamic Caramel ♥️ 

This caramel is brought to you by my obsession with one of North Carolina’s best local secrets… muscadines! These perfect green globes with thick, sun-bronzed skin, can be found growing wild all over NC (my front yard is evidence of their prolific nature!) For this jammy caramel, we use loads of organic bronze muscadines from Eastern NC. We pair them with our naturally grapey 75% single origin dark chocolate from Ecuador and a drizzle of 7 year aged balsamic vinegar from Bona Furtuna. What we get is a grape triple threat: sweet, rich AND tangy. It also happens to be this confectioner’s most favorite treat around.
