Chewy lemon thyme caramel 🍋
You’ve found our wildcard! We’ve got flowering hyssop thyme to thank for this almost savory treasure. Its herbaceous, slightly floral aroma yields to bright lemon as the caramel melts in your mouth. Each piece is finished with a delicately placed single stripe of candied lemon peel, so you’re sure to end the adventure on a bright lemony high.
Chewy banana caramel
Chocolate and banana is a classic combination, so it’s no surprise that this flavor was a favorite from its debut. This year we’ve made the favorite even better (our quest for perfection is neverending, it’s a hard job but someone’s gotta do it) by pouring the beautifully banana-ed caramel over a blanket of cocoa nibs so you get full on banana bread in every bite. To finish, we cover each piece with sweet, crunchy banana chips because they are delicious and it makes each bonbon look like a little punk rocker. 🤘
Raspberry rose ganache (vegan)
This recipe is laughably raspberried–about half razz by volume! We take tart and bright organic raspberry puree and add a smidge of sweetness, a dash of neutral fat (organic sunflower oil) and a whole lot of our 70% dark chocolate. We finish the ganache with a few drops of organic rose oil, just enough to give a whiff of roses on the exhale. The result is a luscious (and totally vegan) ganache that we pipe into our beautiful rose-shaped molds so we can all have fruit and flowers in one perfect bite.
Lavender black pepper caramel 🪻
We wait all year for this caramel. Organic lavender from Palisades, Colorado is the star – the smell is almost unbelievable when we get it – even the shipping box and packing paper are lavender-scented! We steep this incredible lavender along with spicy black peppercorns in local cream overnight. Then we caramelize honey from the mountains of NC and add the infused cream. The end result is a buttery floral delight with a soft earthy finish. It’s one of our very favorites and a Good Food Award winner.
Manhattan Ganache (vegan)
There is nothing like a good Manhattan. Sweet vermouth, bourbon and bitters meld together into an entirely new flavor. IMHO, the only way to improve this banger of a classic cocktail, would be to add some truly phenomenal chocolate – luckily, we’ve got that! We’ve replaced the maraschino cherry with a whole tart dried cherry (trust us, it’s even more delicious), but you can still imagine you’re sipping these flavors from a coupe. Cheers!
Bee’s Knees Ganache 🐝
Back by popular demand because the name is too cute and we love the herbaceous zip of Durham-made Conniption Gin. To make the chocolate-covered version of this cocktail, we start with lemon zest-infused cream, add local wildflower honey (a little fruity, a little floral), our 70% dark chocolate, and use a heavy hand on the aforementioned award-winning Navy Strength Conniption Gin. We finish each bonbon with raw sugared bee pollen so this herbaceous adventure ends on a honey-sweet note.
Tea + Cookies Mega Bonbon
This layered treat takes your tea ritual to a whole new level of luxury. First, we have a full layer of graham cookie, made up mostly by our delicious caramelized white chocolate. Next we pour ribbons of rich earl grey ganache atop the cookie base. After that, it’s through the dark chocolate waterfall and onto the final flavor: a sprinkling of raw sugar and beautiful dried organic cornflowers. At the mega size, it’s big enough to share, but you might want to take a bite before you commit – like the pick me in your afternoon tea, this one is addictive!
