Recipe: Chocolate Oatmeal Candy

Need a quick & easy dessert option for Thanksgiving?

This recipe has been handed down for at least 3 generations in the Matthews family. Hailing from deep roots in southwest Georgia, it was important to make use of what was reasonably-priced, readily available, and no-brainer delicious. Our Project Manager here at Videri, Devin, wants to share the nostalgic staple with the Videri fans here in Raleigh. 

The waves of chocolate cooking on the stove always brings spectators into the kitchen (think, like sniffing hounds). Thankfully, their patience was also quickly rewarded with this treat. (It wasn’t uncommon to make 2-3 batches in an evening!) 

Devin says, “The cocoa powder is the star of this recipe. They are cut from the same cloth– the recipe and the ingredients show up with nothing to hide, much like the chocolate made at Videri. Chocolate Oatmeal Candy sets the stage to spend time together in the kitchen, laughing and sharing sweets.” 

Oatmeal Chocolate Candy

Prep Time: 5 minutes | Cook Time: 10 minutes | Total Time: 15 minutes | Total Servings: 8-10

INGREDIENTS:

White sugar, granulated           2 cups / 400 grams

Unsalted butter, room temperature  1 stick / ½ cup / 100 grams

Whole milk           ½ cup / 100 grams

Vanilla extract           ½ TSP

Videri Cocoa Powder           ⅓ cup

Rolled Oats           2.5 cup / 212 grams

INSTRUCTIONS:

  1. Gather and measure all ingredients.

  2. On the stove, bring a small pot to medium-hight heat.

  3. Combine, sugar, butter, milk, and Videri cocoa powder.

  4. Mix completely, allow to boil for 2 minutes. Sir continually.

  5. Remove from heat, add vanilla and mix completely.

  6. Then, add oatmeal. Mix thoroughly. Mixture will be thick.

Serve warm & plated with a spoon, or chill for later on parchment paper. Please wait at least 3-5 minutes before consuming. CANDY IS HOT.

Devin recommends making it your own by topping with your favorite complimentary items – cinnamon and brown sugar, pretzels, or even Videri Cocoa Nibs. Happy Holidays!
