Recipe: Double Chocolate Rice Crispy Treats
We’ve got the perfect snack to fuel your egg hunt or bring to your first spring picnic: Double Chocolate Rice Crispy Treats. Like the OG, but made even better by the addition of chocolate, and we’re not holding back on that front.
These rice crispy treats are packed with melted chocolate, cocoa powder and chopped chocolate pieces for the ultimate chocolate experience. Plus they come together in a snap, travel easily, and store happily on your counter (for as long as they last at least, which in our experience is never long enough!).
Double Chocolate Rice Crispy Treats
Prep Time: 10 minutes | Cook Time: 5 minutes | Total Time: 15 minutes
Yield: 9 servings (1x 8inch pan)
Ingredients:
Unsalted butter 6 tablespoons
Mini marshmallows 1x 10oz bag
Videri Cocoa Powder 2 Tablespoons
Videri 70% Dark Chocolate, chopped ½ cup (4 ounces)
Kosher salt ½ teaspoon
Vanilla extract 1 teaspoon
Rice crispy cereal (like Rice Krispies) 5 cups
Videri Baking Chocolate or Dark Chocolate, chopped ½ cup (4 ounces)
Flaky sea salt, for topping
Instructions:
Spray an 8 x 8 pan with cooking spray or line with parchment paper. Set aside.
In a large pot over medium-low heat, add the butter and allow to melt fully.
Add the marshmallows and stir with a rubber spatula until all the marshmallows have melted. This might take a minute or two.
Add the cocoa powder, chopped dark chocolate, salt, and vanilla. Combine and stir until chocolate has melted. Add the rice cereal and stir to combine. Add the rest of the chocolate pieces. Mix until just combined.
Transfer the mixture into your prepared pan, and using a rubber spatula coated in cooking spray, press the marshmallow cereal mixture into an even layer. Sprinkle with flaky sea salt, if desired.
Allow to cool for 1-2 hours before slicing into 9-12 rice crispy treats. Enjoy!
Notes:
For best results, we recommend using this single origin Cocoa Powder, this 70% Classic Dark Chocolate, and this Baking Chocolate.
