Recipe: Videri Classic Dark Brownies
Ingredients:
1 ¼ cups (5 ounces) cake flour*
12 tablespoons (6 ounces) unsalted butter, cut into tablespoons
¾ teaspoon baking powder
1 ½ cups (10 ½ ounces) sugar
1 teaspoon salt
4 large eggs
~1 ½ cups (8 ounces) Videri 70% baking chocolate
Instructions:
Grease a 9"x13" pan.
In a medium bowl, whisk flour, baking powder, and salt until combined.
Place chocolate and butter in a separate heatproof bowl. Set bowl over a saucepan of just simmering water to melt, stirring occasionally, just until smooth.
Remove chocolate from heat and gradually whisk in sugar.
Add eggs to the chocolate mixture one at a time. Whisk after each addition to thoroughly combine.
In three additions, fold the flour mixture into the chocolate mixture just until the batter is smooth and no flour is visible.
Spread batter into prepared pan and smooth the top.
Bake for 30-33 minutes at 325° F on the middle rack of oven. Rotate the pan halfway through baking. Brownies are down when a toothpick inserted in the center comes out with a few moist crumbs.
Cool brownies in pan on wire rack to room temperature. Once cool, cut into 2-inch squares to serve.
*If you don’t have cake flour: measure 1 ½ cups all-purpose flour minus 3 tablespoons. Add 3 tablespoons cornstarch to the flour and sift the mixture twice. Use this in place of the cake flour.
