Recipe: Videri Classic Dark Brownies

Ingredients:

1 ¼ cups (5 ounces) cake flour*

12 tablespoons (6 ounces) unsalted butter, cut into tablespoons

¾ teaspoon baking powder

1 ½ cups (10 ½ ounces) sugar

1 teaspoon salt

4 large eggs

~1 ½ cups (8 ounces) Videri 70% baking chocolate

Instructions:

  • Grease a 9"x13" pan.

  • In a medium bowl, whisk flour, baking powder, and salt until combined. 

  • Place chocolate and butter in a separate heatproof bowl. Set bowl over a saucepan of just simmering water to melt, stirring occasionally, just until smooth.

  • Remove chocolate from heat and gradually whisk in sugar.

  • Add eggs to the chocolate mixture one at a time. Whisk after each addition to thoroughly combine.

  • In three additions, fold the flour mixture into the chocolate mixture just until the batter is smooth and no flour is visible. 

  • Spread batter into prepared pan and smooth the top. 

  • Bake for 30-33 minutes at 325° F on the middle rack of oven. Rotate the pan halfway through baking. Brownies are down when a toothpick inserted in the center comes out with a few moist crumbs.

  • Cool brownies in pan on wire rack to room temperature. Once cool, cut into 2-inch squares to serve.

*If you don’t have cake flour: measure 1 ½ cups all-purpose flour minus 3 tablespoons. Add 3 tablespoons cornstarch to the flour and sift the mixture twice. Use this in place of the cake flour.
