RecIpe: Classic Dark Chocolate Pudding

A rich, creamy treat that’s perfect for any occasion. Top with our Cocoa Nib Streusel to take it up a notch!

YIELD: 6 cups of pudding

INGREDIENTS:

4 tablespoons Sugar

3 tablespoons Cornstarch

1/2 teaspoon Salt

1 1/4 cup Heavy Cream

1 1/4 cup Whole Milk

1 teaspoon Vanilla Extract

8 ounces 70% Classic Dark Chocolate, chopped

1 tablespoon Unsalted Butter, room temp

INSTRUCTIONS:

  1. Place the sugar, cornstarch, and salt in a medium saucepan and whisk to combine.

  2. Combine cream, milk, and vanilla in a seperate bowl.

  3. Whisk 1 cup of the cream mixture into the dry ingredients mixture until the cornstarch is dissolved.

  4. Whisk in remaining cream mixture until smooth.

  5. Place saucepan over medium heat; whisk constantly until the mixture comes to a boil and thickens. The mixture is thick enough when it can coat the back of a spoon.

  6. Add chocolate and whisk until melted.

  7. Remove from heat and whisk in butter until melted.

  8. Use a 3-oz ladle to pour pudding into 6 dessert cups. Cover and refrigerate until set, approximately 1 hour.

  9. Serve as is, or top with whipped cream or cocoa nib streusel.
