Coffee Ganache -- vegan

This vegan mocha ganache is what I imagine would happen if you chocolatified my favorite summer afternoon pick me up: a decaf oat milk latte (preferably enjoyed while sitting on a screen porch under a ceiling fan). To get the best coffee flavor we start with Black & White's sugarcane process decaf and use it to make an oat milk coffee which is the liquid for our ganache. We stir in rich and tangy sorghum syrup to add a little more depth and meld the coffee and chocolate flavors together and then finish it off with the tiniest bit of Royal cinnamon. We pipe this ganache into a voluminous dome shape, perfect for popping whole into your mouth for a several minutes long coffee-fueled treat-devouring experience.

This juicy chewy caramel is one we can't wait to bring back each summer. A refreshing wave of flavors starts from the deepest depths of caramelized sugars, moves through the zippy land of tart cherry with a delightful lime twist, and slowly gives way to a calm buttery-rich sea. For a truly authentic North Carolina summer experience, please enjoy in 98% humidity.

If you answered yes to any of the questions above -- cool, same -- we've got just the treat for you. The star of our peach paprika caramel is, of course, the humble peaches -- specifically June Prince peaches with their soft fuzzy skin, amazing floral aroma and deliciously flavorful (but not too sweet) flesh which we process into a super concentrated puree and then fold into a sweet paprika and honey-spiked caramel. It's a succulent flavor adventure through slightly savory and sweetly floral and we think it's downright peachy keen.

Summers are for smoke! You've got your campfires and citronella candles and barbecues, and now also: your smoked chipotle ganache. This ganache is a delicious long distance love story between smoked chipotle flakes from Fire Tongue Farms in California, and molasses-y sumac honey from Mountain State Honey Co in West Virginia. Add our rich and creamy milk chocolate to the mix and you've got yourself a sweet lingering spicy delight to enjoy all summer long.
