Roasting


In the process of making chocolate, we feel that roasting is the most important aspect of all: it’s where the flavor originates and truly takes shape. Roast the beans for too little time and the result is bland, tasteless chocolate. Roast the beans for too long and the chocolate tastes too bitter. We want our dark chocolate to pack a whole spectrum of flavor, as in our best-selling 70% Classic Dark chocolate bar. Our chocolate maker Sam says that each variety of bean needs to be roasted a different way in order to conjure its unique flavor profile.
