*don’t burst our bubble, every year we like to pretend we’re not going to see another 90 degree day til next summer. Every year we’re wrong, but we still enjoy our beanied fever dream. Meet our fall lineup, here to help you, too, get in the spirit – whether or not the weather plays along.

Apple Cider Gelée – vegan

What’s a gelée anyway? It’s basically a kind of jelly. Ours is made with all the apples: local apple cider we concentrate into a syrup PLUS apple puree PLUS apple pectin to thicken. It starts soft and bouncy, plenty sweet but slightly tangy, then the wave of cinnamon hits you and finally the sweetness is tempered by its dark chocolate shell –  a delightful smorgasbord of texture and flavor. We top it with a teeny dried apple bit tossed in cinnamon sugar because it’s cute and delicious and reminds us of cinnamon toast crunch.

Fig & Fennel Caramel

Our fig & fennel caramel combines rich ooey gooey fig newton-y caramel and a chocolate-covered fennel pollen finish. Here are 3 fun facts about figs to enhance your experience of the very best chewy caramel we’ve ever made (I know, hot take!):

  1. Figs are actually flowers that grow inside out! (which makes them the perfect fruit for Halloween because their insides are so freaky)

  2. There are more than 800 varieties of figs. 470 of those grow in NC! 🤯

  3. Ours come from Larry and Claire, the lovely humans to the left, (who happen to be the parents-in-law of our Head Chocolate Maker, Mordecai) grown in their backyard just a stone’s throw away in Holly Springs, NC.

Olive Oil Ganache — vegan

Bona Fortuna makes the most delicious olive oil we've ever tasted. It’s no coincidence that their olive oils are made from 100% organic olives, grown, extracted and bottled at their small estate in Sicily. Any plant that grows in this scenery is bound to taste delicious…

To this remarkable olive oil, we add a squeeze of organic California orange and our 70% dark chocolate.The resulting ganache is truly luscious, totally vegan, and goes spectacularly with a daydream of your next rip to Sicily.

Muscadine Balsamic Caramel

This caramel is brought to you by my obsession with one of North Carolina’s best local secrets… muscadines! These perfect green globes with thick, sun-mottled skin, can be found growing wild all over NC (see my front yard for evidence of their prolific nature!) For this jammy caramel, we use loads of organic bronze muscadines from Eastern NC. We pair them with our 75% single origin dark chocolate from Ecuador and a drizzle of aged balsamic vinegar from Bona Furtuna. What we get is a grape triple threat: sweet, rich and tangy. It’s also this confectioner’s favorite.
