Recipe: Fudgesicles

There is nothing like a popsicle to beat the heat, and obviously our favorite popsicle is made of chocolate! Inspired by the old classic, our rich velvety version has everything you want and nothing you don’t (no suspicious fillers here, plus it’s vegan!). Fill your freezer and be the world’s most popular host, or let us do the work (and the dishes!) and get them in store.

Tools: small popsicle molds or ice cube trays (silicon works best, but your standard plastic will do!)

Prep time: 10 minutes, plus freeze time!

Yield: 10 fudgesicles

Ingredients:

8 oz Videri Baking Chocolate

⅓ cup full fat oat milk

⅓ cup brewed cocoa tea

3 Tablespoons sunflower (or other neutral) oil

Instructions:

  1. Make cocoa tea: bring ½ cup water to a boil. Turn off heat. Add 2 teaspoons cocoa tea and let steep for 4 minutes. Strain out cocoa, reserving ⅓ cup liquid.

  2. Melt your dark chocolate over the stove on a water bath or in a microwave on low.

  3. Stir oat milk and sunflower oil into cocoa tea.

  4. Pour milk mixture over molten dark chocolate, whisking to combine. It will be fluid.

  5. Pour fudgesicle liquid into molds or ice cube trays.*

  6. Freeze until solid.

  7. Flip out and enjoy!

Notes:

*If using an ice cube tray, freeze ~5-10 minutes until the top has set and carefully insert a popsicle stick or small spoon upright in each cavity.

*This recipe is very flexible – your options are as bottomless as your imagination. Make it fruity by substituting juice (orange, cherry, cranberry, or even rosé – you choose!) for the cocoa tea. Use your favorite single origin dark chocolate in place of the baking chocolate. If you’re not sure which one that is, come by the shop and taste them all with us!
