Chocolate

Our beans, cocoa butter, and cane sugar are always fair trade and organic. We often work with generational family farms to ensure that everyone involved in the harvesting and processing of cocoa is treated ethically and paid fairly for their work. We also source our cocoa powder from our friends in Tanzania, as cocoa powder requires a different process to process.

The base of all our bonbons is our chocolate, made entirely in our factory in downtown Raleigh. You’ll find no couverture here, just 100% bean-to-bar-to-bonbon. Uwharrie Mountain Honey

Local honey from local honeybees. Super floral and fruity. Fun fact: we add raw honey to our honey caramel after it’s cooked to make sure the all natural honey flavor shines through.


Simply Natural Creamery - Butter

Located in Ayden, NC, these Jersey cows graze in open green fields and are fed natural foods grown on the same farm they call home. Milk from Jersey cows is higher in protein, calcium, and butterfat; resulting in a rich and flavorful product. No growth hormones, just healthy diets and happy cows make for a high quality natural butter that can be found in many of our confections.

Homeland Creamery - Heavy Cream

This generational family farm, located in Julian, NC treats their cows like family, and uses a traditional vat pasteurization process on their dairy. This process is time consuming compared to the more common method of high temperature short time pasteurization, but allows for the same sterilization while maintaining the natural enzymes and beneficial bacteria that provides a healthier and more flavorful milk.

Sea salt harvested from a sustainable source -- the ocean! Bulls Bay Saltworks uses only pristine water sourced locally from Cape Romain, one of only 156 protected Class 1 wilderness areas in the US.

Sugars

In candy making, sugars act as both flavor enhancement and natural preservative. We use a variety of sugars to bring out different flavors and to keep our all natural treats stable at room temperature. 

Organic cane sugar (aka sucrose) -- ours is fair-trade and organic! 

Honey -- tastes sweeter than cane sugar, stays liquid basically indefinitely, and has a distinct floral flavor.

Glucose syrup -- made from plant starches (most often potatoes) glucose tastes less sweet than other liquid sugars, but still prevents crystallization (like its liquid sugar relatives)

Molasses -- thicker and less sweet than cane sugar, with a warm, rich flavor.

Invert sugar -- a liquid form of sucrose we make in-house by cooking cane syrup with citric acid. This breaks down the sugar crystals permanently so they won’t re-crystallize.

Soft Serve

Howling Cow NC State - Soft Serve

We source our soft serve mixes from our very own Howling Cow Creamery in downtown Raleigh. With 300 cows and 329 acres of farmland, they have been slinging the state’s favorite dairy treats for over 70 years, and we’re grateful to be able to offer this superb product to our community. The chocolate Soft Serve is made with cocoa powder sourced from the Cocoa farm we work with in Tanzania, giving it a rich flavor that meets our rigorous standards of quality and decadence.


Sweetapolita - Sprinkles

Finding products that don’t compromise our commitment to allergen safety can be a bit of a challenge, but you can’t have a soft serve counter without rainbow sprinkles! That’s where Sweetapolita comes in, delivering a vibrant product made with plant-based dyes that allows us to add a bit of crunchy, colorful joy to our treats while still maintaining the allergen safety of our factory and products.


Joy - Waffle Cones

This is the only item in our store that contains gluten and a touch of soybean oil, and is thus carefully maintained to prevent cross-contamination, but are peanut and egg free! These classic waffle cones provide the perfect edible receptacle for our soft serve, and we opt for the added cone jacket to provide an additional layer of food safety during handling and devouring. 


Cabot Co-Op - Whipped Cream

Established in Vermont, in 1919, this co-op of farmers have been working to provide a sustainable and reliable product from happy and beloved cows for generations. Now encompassing over 800 farm families, this co-op works hard to care for their farmers, the community, and the environment.

Sustainability

We work hard to reduce our environmental impact, and are constantly in the process of rethinking and improving our packaging and shipping methods. 

We’re not plastic free just yet, but we opt for Kraft Paper, compostable plant composites, bio-polymers and recyclable items whenever possible. 

The ribbon for our bonbon boxes is made entirely of recycled plastic bottles, and our candy pads are made out of paper products. 

While we’re still learning and improving every day, we know that each step towards sustainability and eco-consciousness is a step in the right direction.
